1. Make the Apple Filling
In a skillet over medium heat, melt the butter. Add diced apples, brown sugar, cinnamon, and nutmeg. Stir well and cook for 5–7 minutes, until the apples are soft.
Add the cornstarch slurry and cook for 1–2 more minutes until the mixture thickens. Remove from heat and stir in vanilla. Let cool.
2. Make the Cheesecake Filling
In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Transfer to a piping bag or set aside with a spoon.
3. Assemble the Pies
Spoon about 1–2 tsp of cheesecake filling onto the center of each pie crust round. Top with a spoonful of the cooled apple mixture.
Brush the edges with egg wash, fold over into a half-moon shape, and seal with a fork.
4. Fry the Pies
